Tobi, originally joining to upgrade the tech at our families bakery in Germany (@erbelbrot), found his calling - next to producing music & making noise - in ... producing, treating and feeding sourdough and opening a business, inspired by his 'chosen' father Arnd Erbel - the husband of Michaela Erbel, Tobi's Mother.
What started as a two-week stint turned into a, well, longer journey their Family-Bakery in Germany. He's now dedicated to sharing the positive impact that sourdough has on all of us and is baking exceptionally great sourdough bread - according to your feedback. Annie - from not eating bread (before being Tobi’s Girlfriend) to living above the bakery in 2020 ... to becoming a bread enthusiast to .. again living on top of the bakery and even owning a bakery- Tobias's partner and a lover of all things sourdough - especially sourdough croissants and ‘La Miche’ (our signature sourdough) with just butter.
Her suggestion (Schnaps-Idee we'd say in German) in 2021 to "why not start a bakery in Cape Town" was a key moment that led to where they are today. More than a pet, Hailey is our joy-bringer and unofficial-official mental health therapist. She's also our chief greeter, ensuring everyone who steps into Bäckerei is welcomed with a wag.
