Welcome to our little "PR Corner"

Our Story

Hello! It's Tobias & Annie. 


We founded Bäckerei - German Artisan Bakery with a simple mission: to bring German bread culture to our favorite and new home country, South Africa, while continuing our family's heritage and tradition.


Our experience and knowledge has been passed down through 12 generations. At Erbelbrot, our "mother bakery" in Bavaria, the ovens have been continuously running since 1682. In 2021 we decided to start a new chapter with our own story here in South Africa.

149 Main Road - Alexandra Place

A brand new boutique shopping center.


Entrance to Alexandra Place through the free parking at the back, 1 Dirkie Uys Road.

So ...what is proper bread?

Bread = high quality flour, purified water, sea salt,  a lot of time, and passion.

Nothing else. No long list of ingredients. Our breads undergo a lengthy fermentation process—one loaf takes between 18 and 36 hours from the start of baking until it's ready to eat.

It's pure. 


It's 100% sourdough. No yeast. No rising aids. Just natural fermentation.

  • Our full names are Tobias Mondrejevski and Ann-Kathrin Hitzler - we both grew up in Bavaria, Germany and lived in Munich for a long time
  • The companies name is: DEUTSCHE BACKEREI PTY LTD. 
  • Our brand is "Bäckerei - German Artisan Sourdough"
  • "Bäckerei" translates to bakery in German
  • Sourdough is not gluten-free, but it's low in gluten and since we are baking 100% sourdough without additives, gluten-intolerant people may most probably eat our sourdough varieties
